You have a couple of options at the Bellagio, and there are many options at nearby hotels.
http://www.lasvegasadvisor.com/restaurants.cfm >you can check for any/all restaurants at your or any hotel you're interested in.
Cafe Bellagio is open 24/7/365
Cafe Palio opens at 6am, 7 days a week
If you have a little extra time some morning and would like to try a great inexpensive buffet. The breakfast buffet at Palace Station is my favorite, $4.99 if you have a Station "Boarding Pass" slot club card, $5.99 if you don't.
Later: "Shushin" is right about the Barbary Coast(now Bill's Gamblin Hall). They serve a great steak and eggs breakfast.

The Flamingo has a pretty good breakfast buffet and is around 22.00 per person. The Paris is around 25.00 per person. The Paris does have good crepes though. I would say that you are probably going to have to order room service or hit a cafe if your tour starts at 6:30 it is pretty early. I have been to a few buffets early but not before 6:00. A lot of the cafe's are open 24 hours and you might be able to get a good buy on breakfast before 6!

Breakfast buffet at the RIo - something for everyone. Most of the shops are open by 9:00 in the morning (some even earlier than that) and stay open fairly late - 10:00PM - 11:00PM. Almost all of them are open 7 days a week.

My favorite place for breakfast is America at New York New York. It's open 24 hours. I highly recommend the Little Italy or the Empire State Plate. =)
Shops? As in retail? Most open at 9 or 10am and stay open until 10 or 11pm.

Hi
We had one at the Barbary Coast just across the road. The place does not look great. But oh my god the breakfast was to die for. Service was excellent. So the saying you cannot judge a book by it's cover is so very true.
We stayed at the Belliagio lovely place but the prices for food are very high.
Enjoy your stay.

I agree the Peppermill is awesome, but you also might wanna check out the Hash House on Sahara just a couple of miles west of the strip, the food is worth the trip.
