I love questions just like this because I get to promote my recipe! I made this up about 5 or 6 years ago while in college. I had a lot of staple foods, but couldn't think of anything to make. Here's what I came up with -- it's actually very good. But it's more of a winter meal, not summer. But you said it would be on your table next week. So here goes:


Green Bean Chowder

I envision eating this in a rustic-type bowl while sitting in front of the fireplace in a log cabin on a cold winters day! This is very easy to make and most of the ingredients you will most likely have on hand. I'm just not sure if you would consider this a chowder though. I use a 5-qt crockpot when making this.
Makes: 6 - 8 servings Prep Time: 30 minutes Cook Time: 6-7 hours Ready In: 7.5 hours Servings:

INGREDIENTS:
2 cups ham; diced into bite size pieces
4 potatoes; diced into bite size pieces
4 cups total frozen vegies; (green beans, peas, carrots, snow peas, etc.)
1 large onion; cut how you like
garlic; how ever much you like
1 can cream of mushroom soup
4 TBSP milk
1 cup sour cream
1 cup water
basil, oregano, salt, pepper, etc.
1 28oz. can diced tomatoes with juice

DIRECTIONS:
Mix mushroom soup, milk, sour cream, water, and spices in LARGE bowl. (I only have a 5-qt crockpot so I had to mix it in my huge roasting pan! If you have a larger size, you should be able to mix it in the pot.) Then mix in ham, potatoes, vegies, onion, and garlic. Put into crockpot. Pour can of tomatoes with juice on top of other ingredients. Cook on low heat for about 6 - 7 hours.

Yummm....

Get some pork chops or pork steaks.
Peel some Idaho potatoes.

Get a big Corning glass casserole dish with lid.

Layer chops, potatoes, chops, potatoes, etc...to the top.

Sprinkle salt, pepper and paprika.

Fill with water almost to the top.

Stick in oven for about 2 hours at about 350.

It's pork so check that it's done well. Eat.

Some people like onions too, but I like this dish straight.

Lemon Chicken Snitzel

1 pound boneless skinless chicken breasts
Juice of 1 lemon
1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon thyme
1/2 teaspoon celery salt
1 egg
1 teaspoon water
1/2 cup fine dry breadcrumbs

Cut chicken horizontally into 1/4 inch thick slices. Place between 2 pieces of wax paper and flatten chicken with meat tenderizer hammer. Sprinkle with lemon juice: let stand 10 minutes.

In shallow dish combine flour salt thyme and celery salt; mix well.

In another shallow dish, lightly beat egg with water. Dip chicken into flour mixture, then into egg, then into bread crumbs. Place on lightly greased baking sheet.

Bake in 400 degree F oven for 10-15 minutes or until chicken is no longer pink.

Makes 5 servings.
