The way I would do is to export the old users emails to a PST, create the new user profile/Exchange account, sign on and create the mailbox, then import the PST from the old user, its cleaner to start fresh for the new user.
And forward all 'old users' emails to the new one.

I would export the old employees emails as a .pst file then create the new employees account. At this point he has the option of reimporting the old employees emails or better yet just letting them stay in the .pst file as a searchable archive.

I agree with the guys here, just export his information as a .pst then forward all emails to that new employee or give that new employee an alternate email address which is the old empoyees email address that way you can clear up that old user off of your domain.

All you have to do is go to the mail server, login and get the e-mails from that account.

I am pretty sure you can get the files to another account by cutting and pasting the outlook file from the old account to the new one.

Good Luck!
