This is not always true, but is alway sometimes true for everyone. The most practical answer for this is chance- Because human being are so complex, the amount of possibilities borders on infinite, and coupled with the fact the world is based on patterns and the fact that we also tend to be fairly predictable, there is a large possibility of the notion you are implying of occurring. a more exotic explanation would be that of eastern concepts such as ying and yang- that is, in order for the world to maintain a balance, there must be at least a close to equal amount of light and dark, positive and negative, sweet and sour, happy, and sad, etc.

We don't ALL want things we can't have. Nor do we ALL stop wanting things we do have.

Let's back this up a bit, though. Why do you want things at all? Who is it that decides what you want and what you don't want? The way I see it, there can really only be one person responsible for this: YOU.

Of course, many people abdicate this responsibility. They let others decide things and they go along with it. They allow themselves to be easily influenced by television or their government or their friends or whatever else. But this only happens because they ALLOW it... or perhaps because they lack the strength to resist.

And how do you get strength? By exercising! Strengthen your will. Nobody can do this for you. You have nothing to lose but all the pointless suffering that you allude to.

Peace.

When you don't have something, you want it because you don't have it. People are always longing for more and new things. I don't think it's true that we don't want things we have, at least not always. Imagine you don't want your family. (I mean, you have a family usually) You just have no desire to have them anymore, but that's the logical consequence of having something, don't you think?

Appreciation does not come easy to human nature. We are always searching for more to fill us until we can no longer move, than we only long to declutter our lives and relax. We don't seem to be able to balance our lives whatsoever.

Its the nature of wanting. It is a mind state in which satisfaction does not exist. Anyone who does not know the meaning of enough will never have enough.

But it's all good, for it's only our nature; WE WANT. Is that really so hard to see?
