The most extreme environment is probably the peak of Everest, which gets visited by a few daring mountaineers on a fairly regular basis. Its so extremely high up that oxygen starvation is a very real problem, the air up there is extremely cold and dry so dehydration is also and issue, and the cold makes things much more difficult. However to the native people of Nepal, they have adapted to high altitudes by having a blood more dense in heamocytes, and having higher quantities of the oxygen storing pigment myoglobin in their muscles.
I suppose the extremest conditions would be to get a man from Ethiopia where it is extremely hot, fairly close and it some places below sea-level, and get him up mount everest. Conversely a sherpa would probably find living in the desert extremely tough.

I have always respected the Eskimo people for living in what I imagine to be the most challenging environment

The most challenging would be outerspace. You have to bring your own air, food, water heating and cooling, etc. If you are not on a planet, there really is nothing in space that you need except maybe light assuming you are close enough to a star to have any.

I would have to say high altitudes due to the lack of oxygen, food, and shelter. Also cold regions seem to be less populous than hot regions.

Yes, I'd have to agree with "the interior of the sun" or "within the event horizon of a black hole," or even space, the final frontier.
