it might not be the most interesting but it was the first one i though of:
When you get a kidney transplant, they don't remove the old kidney(s), just put the third one in the abdominal cavity and connect up the the blood supply and urether. so you end up with 3.

bacterial flagellum is a tiny tiny piece of our world and is so very very very complex and amazing in how it functions.
i found that one while looking at the whole intelligent design debate - i just found it an amazing thing regardless of the arguement.

also theres a tiny creature i think called the waterbear (no joke) which can lie dormant for hundreds of years and do other amazing things. like survive to -450.
