As long as the "whiteness" isn't related to excessive production of their slime coat (which could indicate a potential parasite problem), it probably isn't a problem. See the link below for information on color changes in goldfish:

If they seem healthy and the water quality is good then there isn't much reason to be concerned. Here's something I found on a web site that talks about this specifically..
"There are several reasons that goldfish and koi change color. Genetics, diet, pH, water temperature, mineral content of the water, and some things we probably aren't aware of. It isn't uncommon for goldfish to become completely white. It has been my experience that goldfish and koi colors are most vibrant in early spring while the water is still cool/cold. Some hobbyist feed their fish color enhancing food to help them maintain their bright colors." Hope this helps... best of luck.

Unfortunately PH will not change the color of your fish. The main reason goldfish and Koi will change to white is due to a genetic breeding. White is not a color breeders go for however novice breeders will buy lower grade stock where white is more prevalent. Nothing to worry about however. Koi and goldfish as well will change color due to their diets and lighting. High light will turn their colors lighter or faded. Foods high in fat and ash and low in proteins and carotins will also dull or fade their colors.
Try changing their diets to include more proteins low fats and high fibers like beans, carrots, chicken and/or beef livers.
