What are the best ways of treating bamboo for structural use in wet conditions- i.e. my garden to last 20+ yrs

I would recommend drying it out first either naturally or using a dry 'hot box' at around 40 degrees, for a couple of months.

Then seal it using some kind of lacquer or varnish, using a few coats will help protect it. If you really want it to last you should recoat every couple of years or so.
