I'd 'have' soup.

Perhaps you 'eat' soup in a bowl especially when there are bits of food in the soup. You'd 'drink' soup when you use a mug and the soup is free from bits of food. That would be my first answer.

The second answer is this: Here is an article on Soup Etiquette which used the phrase 'eat soup' several times. I guessing that it is proper to say 'eat soup' rather than 'drink soup.'

From a soup dish you eat it, especially when there is meat or onions or vegetables in it.
