There are only two fairly "official" long-term fiancees:
Akane Tendo (engaged to Ranma in the first episode)
Ukyo Kuonji (dowry taken by Ranma's dad)

There are a lot of other women chasing Ranma, and even a couple that he chases once or twice, but those are the only two who have anything that looks like an official agreement that lasts more than one story arc.

There are two more who might imagine themselves fiancees but probably aren't so, from the Saotome family point of view:
Kodachi Kunou
Shampoo

There are two short-term fiancees:
Nabiki Tendo ("Nabiki is Ranma's Fiancee" episode)
Kaori Daikoku ("Martial Arts Take-out" story line, anime only)

Kodachi might belong on the "temporary" list as well: there is an anime episode where she pays Ranma's dad a lot of money to be his fiancee, but it's just a temporary arrangement.

If we count people who have (romantically) tried to chase Ranma (male or female form), at least for one date, we'd add Tatewaki Kuno, Mikado Sanzenin (Golden Pair figure skater), Harumaki (old man who gets one date), Picolet Chardin III ("Martial Arts Dining" stories), Maomolin (ghost cat), and even the Scribble Panda
