Seeing as you said you will only be there for one night I am guessing that you will be off on a cruise or something the next day. I would take it light and just go downtown and to the gaslamp. Plenty of resturants, bars, and things to see.
If you are really up for a party head over to PB. Grant and Garnet street are filled with outdoor patio resturants and pubs and you can always actually go to the beach.
Need to do some shopping? Head over to Fashion Valley Mall and all of Mission Valley. Lots of stores to get whatever you want with less crowds than downtown.
Mattering on what night you are there you could always catch a Padres game. The crowd is always fun and there is a play area if you have kids.
My personal favorite place for a burrito is Santana's. The one off Rosecrans in Point Loma is the best no matter how run down it looks. And you will be real close to the Marina from there which is always nice to sit and watch the boats come and go.
The Zoo and Sea World are a good time but can be expensive.
If you have any questions before you get there or afterwards feel free to ask almost everyone is really cool and friendly.

Go to the Mission in the morning. The San Diego de Al cala mission. Oldest building in the whole city. Then visit the hotel del coronado on Coronado Island. Spend the rest of the day on the board walk going back and forth from Mission Beach to Pacific Beach. Enjoy the beach and the beautiful people you'll see. Maybe rent some rollerblades and a bike. For dinner, head down town to the Gas lamp district (downtown San Diego is the gaslamp district). Spend the rest of your time in the gas lamp checking out horton plaza and all the cafes, restaurants and bars along forth and fifth.
That is plenty for one day.

One day is not enough time for San Diego. You could go downtown and tour the USS Midway Museum. You can also take a Harbor Excursion around the bay. Boarding for the bay tour is right next to the Midway.

If you like Mexican food go to Old Mexico is a part of San Diego...it is a place with shops and they have this restaurant that makes tortillas by hand and you can watch them......They are goooooood fresh.

depending on what you like to do there are tons of things to do , :the sea port village, Old town, corondo island, gas lamp district, sea world, the zoo, the museum, the beaches, the tide pools, the aqurium, there are more things but you only have one day .. When you check in at your hotel look in the lobby there are usually pamplets there and ask them what they suggest

Seaworld is fun but if you like architechture...go to Coronado Hotel. There's a beach there and some awsome homes.
