Of course, many will cite the heavenly and exciting culinary experience of the French Laundry, but since you need to make a reservation a year in advance and mortgage the house to pay your bill, let's look at some other options.
My all-time favorite has always been the Catahoula Restaurant and Saloon in Calistoga. Chef Jan Birnbaum has created an upscale California/Cajun cuisine that is memorable, mostly based on braising techniques in a huge wood-fired oven. I will never forget a whole braised snapper at Catahoula that literally melted in my mouth! And the place is a lot of fun, trendy, uplifting. My girlfriends and I ended up sharing tastes of wine and desserts with the men at the table next to us, it just turned into a little party. Prices are moderate.
I also love the restaurant at Auberge du Soleil. It's the best of local Northern California ingredients presented very creatively, with impeccable service. They also have a terrific Sunday brunch. Pricey, but you will walk out feeling like royalty. http://www.aubergedusoleil.com/html/dining.shtml

Copia is so overrated. The first one that pops to mind is Pilar in downtown Napa. There's also a restaurant in the Silverado Country Club (open to the public, can't remember the name) that specializes in Pan-Asian foods with lots of seafood. Sushi Mambo is also downtown, it's a nice place, but last time I was there the service sucked. There's a new place on Soscol in Napa called Lobster Shack. It sounds cheesy, but it's a nice place with gourmet seafood. Cole's Chop House is very upscale, and although it's mostly beef, they have some excellent seafood. So does Bistro Don Giovanni.

Cole's Chop living house in Napa acceptable, downtown. My husband and that i went there for my thirty 5th birthday. once you e book the reservation verify you tell them this is for a particular social accumulating. We have been dealt with like royalty. And seated in the loft with a view of the eating room. Get the blackberry sorbet for dessert. this is to die for!

Try Fume. We just went there this past Winter and had the salmon. It was very good!
It's somewhat casual compared to some of the other restaurants in the area and you can bring your own bottle of wine.
