How would someone go about converting CO2 into sugar? Is it only possible in a lab?

Quite the opposite. Nature coverts CO2 into glucose relatively easily, with enzymes.

In the lab, it would be a rather involved synthesis. You're talking about converting CO2 into a six-membered hexyl ring with several chiral centers.
