Clip the main trunk at the top. I assume you are trying to slow down its growth.

Topping a plant means removing the very top of the plant. Farmers of tobacco do it all the time. The flower usually grows at the top and so they go and remove the flower in order to encourage more leaves to grow.

Topping usually refers to improper tree pruning where the trunk and main branches are cut back at indiscriminate locations. It is a cardinal sin in tree pruning and shows the ignorance of the person doing the trimming. IF and that is IF a branch needs to be shortened in length, it is better to use a heading cut (often called drop crotch) where the cut is made just above a side limb no less than 50% the diameter of what is being removed. Cutting back trunks is greatly discouraged due to the damage done to the internal wood..but like the branch cut, a trunk can be "dropped back" to a side branch, once again no less than 50% the side of the trunk being removed.
A good tree trimmer, for example a well trained arborist, will use a series of thinning cuts where side branches are removed back to their origin and only a few heading cuts....to achieve a well proportioned pruning job that doesn't look like it as been amputated.

It means to trim the top of the plant to encourage it to branch out and become bushier.
