The Australians speak a very specific dialect of English, with a very specific accent, which is not really representative of English worldwide.
You're better off going to Britain or Canada.

Wherever you go you will be learning a dialect of English and gaining a local accent. There are hundreds of accents and dialects in the UK. There are four major ones in the USA and two in Canada. New Zealand, South Africa and Australia have one each at this stage but different accents are developing.
The best place to learn English in Australia would be the big cities, Sydney and Melbourne. My preference is for Sydney, it has more going for it than Melbourne. I have known quite a few French speaking people in Sydney from France, Canada, Algeria, Mauritius and French Polynesia. They all seemed to be having a good time and settled in well.

there are many good schools here to learn english and a lot of people come here to do so and have a unique and different experience. as an adult, you are not going to develop any kind of accent such as american, british or australian. you will always speak english with a french accent which is quite sexy!
check out englishaustralia.com.au for more info about schools. as for where to live, maybe a good idea is to go to a few different cities and towns if you can. also, check out ACE (ace.edu.au) they have schools in Sydney, Brisbane, Cairns, Perth, which would give you a great experience of different places here. the schools here can organise accommodation for you if you need. good luck, enjoy!

You will learn English in any English speaking country.
If you want to be close to your community, most french speaking people I know live around eastern Sydney.

Why go to Australia for English. Wouldnt the best place be USA. Or better yet proper english would be in England.
At least your willing to learn english unless some other people I know.

I did not have to go anywhere outiside my country to perfect my English. I assure you I am way further than you are from any Native- English Speaking country and I speak it better than many native- speakers

They speak awfully odd English in Australia :-) and cannot seem to spell colour or gray correctly....
Consider Canada, aye?
I would go to Ireland. I met Seamus Heaney (Nobel in Literature) in writing school and he said, "The Bristish invented English, but the Irish perfected it!"
