Consistency - If using command keys - make sure that the command key does the same thing on every screen. Keep the layout consistent. The user should not have to spend time trying to find things on the menus, or spend time trying to figure out how to move between menus.

One thing very much to consider is that your screen viewer may have javascript disabled. Allow for "graceful degrading" if response to your menu depends on event-driven javascript!
