Do you mean interaction between the fish and humans or fish with other fish?

If you mean with humans, most fish will learn to act hungry when people approach the tank, or when a hand is held over the tank, others learn to hide when the lid is opened and others can even learn to recognize a specific person. They will also learn to interact with other animals outside the aquarium.

If you mean fish to fish interactions that can cover a huge range of behavior depending on the species involved and can include interesting and entertaining breeding activity as well as schooling and territorial behaviors.

Yes, fish are definitely curious. Almost all of my cichlids will come to investigate when I put my finger up to the glass near the bottom of the tank and wiggle it. I then pull it down out of sight and they all will come a little closer to the glass. If I raise it too quickly, they all back up, but come right back as soon as I wiggle it and lower it out of sight.

You can train oscars and some of the other big fish (like pond goldfish and other large cichlids) to eat out of your hand. I have also seen fish (goldfish) that would swim through little hoops suspended under the water.

Bettas kept in small unheated unfiltered bowls soon lose interest in everything and slowly die. Most do not live longer than 6 months to a year. If kept in tanks, as they should be, with heaters and filters, they will interract with you on many levels and live up to 5 years..

I have a black ghost knife fish that will come and rest in my hand when I put it in the water, it also comes to feed from my fingers. My 2 year old beta is curious about everything, and if he is in the mood he will swim through a hoop that i made from a 2 inch O ring. so yes interaction is possible with a little patience.

I find my fish (especially Bettas) are very curious indeed!

Some fish have their own personalities (generally those that can be kept alone, rather than the shoaling kind) and can be a lot of fun.

Tank watching is brilliant and has been proven to lower stress levels - enjoy!

I assume that you can teach them stuff. My 4th gradeteacher actually taught herBeta when it was time to eat! otherwize your just God to them. You feed them, you can kill them, you can create a tsunami that sweeps through the tank. Thats it I guess.

i don't believe any interaction except aggravation or fear on their part. now if you get a kick out of that then that is a totally different story.
