L is for line and it is black
N is for neutral and it is white
G or earth sign is ground and is either green or bare, most likely bare wire.

First let me agree with most of the people above, Black or Red is your line, or hot wire. (Red can mean switched which might be the case here.) White is the neutral wire, it can have some voltage on it, but not full line voltage as it is the "return" for the voltage used throughout the system and is therefore not full line voltage, USUALLY. As you are in Australia, I don't know what your line voltage is,,, in the US, its 110 AC. Here's the exception I don't see most of the other answers getting to... Since this is a kitchen light, its likely to be a fluorescent light. If this is the case the wires coming out of the "ballast" might be confusing you. Unless they have come apart from the receptacles on each end of the tube(s) (assuming 4 foot or 2 foot, straight tube fixtures?) Don't worry about them. Just deal with the two wires coming out of the heavy metal box (ballast) and attach the green or bare wire to the green screw in the light's metal frame. The black wire should be attached to the black or red wire coming from the ceiling, and the white to the white. Obviously if you don't have a fluorescent light, ignore these instructions... LOL

The answers all are correct. One thing you can do, it get a cheap volt meter, and check the wires yourself. If you get the correct voltage, you will know which wires are which, since the red voltmeter lead is connected to the hot wire (L), and the black lead is connected to the neutrual (N). The green, or bare wire, is ground, so connect that to the ground screw on the light fixture.

The green or bare wire is ground (earth). The white wire is Neutral and the black wire is Line or hot.
