Gravity hurts: you can feel it hoisting a loaded backpack or pushing a bike up a hill. But lack of gravity hurts, too: when astronauts return from long-term stints in space, they sometimes need to be carried away in stretchers.
Gravity is not just a force, it's also a signal -- a signal that tells the body how to act. For one thing, it tells muscles and bones how strong they must be. In zero-G, muscles atrophy quickly, because the body perceives it does not need them. The muscles used to fight gravity --like those in the calves and spine, which maintain posture-- can lose around 20 per cent of their mass if you don't use them. Muscle mass can vanish at a rate as high as 5% a week.

There is no problem with the swalling of food in zero gravity. In this proces the gravity has insignifient effect. Try a little experiment. Lye down on the bed, on your back, with your head over the edge of the bed. Within this position try eating an apple. If gravity would efect the salling part, normaly u shouldn't be able to swalow. But you can becouse the swalowing proces is helped by you muscles.

Normally your muscles make things go normal. Over time you lose this and it lead to problems. This why Astronauts use a type of Isometrics to exercise when it space. If not, they return from space-lab and not be able to walk or possibly lift a cup of coffee, depending on the time period.
I not sure, but, maybe these links help;

Well, actually no coz t6he blood circulation in our bodies get affected. It slows down and our body lose weight in zero gravity:
