Look for job postings for things that involve the word "analyst".

Your economics degree has (I hope) taught you valuable analytical skills, including some quantitative analysis.

Even if you don't do economic analysis, you should be able to apply the same thought processes to different situations....analyzing a budget, or business plans, or financial accounts.

Best of luck!

Banking and Government. I used my degree and do a combination of both. I assess business plans. But your degree is a general building block, that doesn't have to be specific to only a couple of paths. My path happened to have a similar sounding name, yet little of what I learned in school helped. It was all self taught on the job training.

Let see, Friends that graduated in Economics....mostly are in government, one works with Customs, one went on to law, one works in a city financial department.
