As two others above me have already said, A canuck is a slang term for a Canadian, but rather meant more for French Canadians. It can be an offensive and rude term depending how it's used.
And the answer to the question of the first poster: In the logo, it's an Native-American representation of an orca coming through the ice.
I read a fairly recent news article about the Vancouver Canucks showing interest in changing their logo. They want their team representation to be detached of the Orca Bay Company.
