As two others above me have already said, A canuck is a slang term for a Canadian, but rather meant more for French Canadians. It can be an offensive and rude term depending how it's used.
And the answer to the question of the first poster: In the logo, it's an Native-American representation of an orca coming through the ice.
I read a fairly recent news article about the Vancouver Canucks showing interest in changing their logo. They want their team representation to be detached of the Orca Bay Company.

A Canuck is a small furry rodant that looks a lot like a prarrie dog, except he is frozen for eleven months of the year. When he thaws out, he has just 30 days to eat, mate, buy gas, play hockey, smoke, drink, mate, and pay taxes! That is why he has a very bad disposition. He tends to be pissed off a lot. The best thing to do if you see one, is move away quietly, and call a Mounty!
