hat-trick is when abowler getz 3 wickets in 3consecutive balls...
(like the one maling agot against SAF)
it can be the last ball of an over and the first two balls of the next over

A lower order batsman sent in when the light is dimming to play out the remaining overs of the day or when a wicket falls towards close of play in order to protect more valuable batsmen for the next days play is called a Nigjt Watchman
A bowler taking a wicket off each of three consecutive deliveries that he bowls (whether in the same over or split up in two consecutive overs, or two overs in two different spells.) is called a Hat Trick. If the bowler takes a wicket each in 1st, 3rd and 4th or 1st, 3rd and 5th ball is not a hatrick. It should be in consecutive balls.

Night Watchman - occurs in Test cricket when the bowling side takes a wicket very late in the day, the batting side may send in a lower order batsman (usually a player more recognised as a bowler). This is done because on the chance that another wicket is taken that day the batting team are better off loosing a not-so-good batsman rather than a quality batsman, for example Australia may send in someone like Brett Lee or Nathan Bracken to bat rather than someone like Ricky Ponting or Mike Hussey as the latter two would be more valuable wickets and if a wicket is lost, the loss of Lee or Bracken would be less detrimental than the loss of Ponting or Hussey. I hope this makes sense to you.
With the hat trick, this is done when wickets are taken on 3 consecutive balls, such as balls 1,2,3 or 3,4,5 etc. Also a hat trick can be spread over 2 overs, such as the first 2 wickets taken with balls 5,6 of one over then 3rd wicket taken with ball 1 of that bowlers next over.

Night Watchman:
The job is to keep their wicket intact rather than smash the boundaries for the runs.
Good judgment is very important - the night-watchman will have to leave the ball outside off-stump.
A good, solid defense goes without saying and the ability to take a few sharp blows from the opening paceman also helps.
Assuming they have survived the night before, the night-watchman has done their job.

The term originated in cricket, where it refers to three wickets taken by a bowler in three consecutive balls, traditionally rewarded with the presentation of a hat. Hattrick is when a bowler takes three wickets off successive balls, i.e 1st,2nd,3rd or 4th,5th,6th or 5th,6th of one over &1st ball of the same bowlers's next over or it could even be a hattrick when a bowler takes 3 wickets off successive deliveries spread over this match and the next match in which this bowler bowls. Nightwatchman is a player sent in to bat(usually a tailender) to fend off the remaining balls/overs before the end of the day's game in a long duration cricket match(5 day Test match, 3/4 day first class cricket match etc).

a night watchman occurs in test cricket. when there are a few overs, you get a lower order batsman to come in after one of your top batsman are out so that you dont waste another good batsman. hard to explain properly as im no good with words but it basically means to put a low order batsman to finish the last couple of overs rather thann put out a good batsman and risk the chance of losing him.
moving on, a hat trick is when a bowler gets 3 consecutive wickets like as you said above 1 2 3. 1 3 5 does not count as a hat trick as they are not consecutive.
