The idea is in triggering the music to play which means you can use different types of sensors to trigger your music, here are a few types of sensors you can use. Strain gages under the mat, photoelectric or laser sensoring aimed at where people will stand, ultrasonics or microwave detection placement all will do it. You could make these up from your local electronic projects store or they could all ready have one made already. A little bit of research and you should be fine.

For electricity you could demonstrate current in food items like a potato clock or lemon powered car, for magnetism you could create a track that a car "floats" on the reversed polarity of magnets.
