I think sometimes there are no significances. It's just fun to doodle about anything, and I'll doodle sometimes and deliberately draw something just because I think it'll look cool. :P I used to draw these really freaky looking squiggly/straight lines all over the place, without any rhyme or reason to it, and then one day I was unconsciously fashioning them into a skeletal face. Probably because I wanted to see if I could, and I thought it'd look cool if I did. It ended up looking like a jack-o-lantern. XP
Anyways, and sometimes I draw scenery pics, or hearts, butterflies, water fountains, mountains, roses, etc. Just because they're pretty or I'm in a light hearted mood. But sometimes, the roses end up being filled in and they're black, and they'll be surrounding some kind of macabre thing, or the hearts will be torn in two, with a sword or something shattering into it, and the mountain scenery will change from a sunny disposition, to a dark sky with lightning and rain pouring down, and I realize that I'm doing that because I'm feeling sad and empty, but I don't realize it at the time I'm drawing them. :\ So... I think sometimes, we just doodle for fun, or because we're bored or something, but I also think it could reflect our mood, or what's on our mind, and we're doing it unconsciously.

It shows an odd view of what a person is felling/think. (i.e. A doodle of a person crying shows saddness, a doodle of a person might shows closeness or lonelyness)
