A lot! I'm currently in International studies - I might be switching, but its not for lack of job opportunities.
Depending on the area of concentration (human rights, business, economics, area studies, political, etc.) will depend on jobs. You can work in international corporations, the international sector of big business, UN ambassador, the World Bank, the International Monetary Fund, local, state, or national politics, NGOs, IGOs, universities as professors, researchers - there's a land of opportunity out there!
Also, before jumping right into a job after undergrad you can do peace corp.

Everyone I knew in college who majored in that ended up going to law school and joining high-end firms. They also took tons of foreign language. They're all rich now.
