You are right in that when discussing light, white represents the combination of all colors of the spectrum and black complete darkness.
But when talking about pigment colors the opposite is true. White is the absence of pigment and black can be thought of as complete saturation. Mixing different colors of light together produces very different combinations than mixing those color pigments. For example, mixing red and green light produces yellow, not the mushy brown you would get from mixing red and green paint.
Gray is a pigment color, gained by mixing some black and some white pigment together. There really isn't such thing as gray light, just white light of different intensities.

Color is a little complicated but here is my best answer:
Black actually absorbs all possible color spectrums (that the human eye is able to see) and White actually repels all possible colors. (This is why black objects tend to attract heat faster). Grey only absorbs that specific color spectrum which in turn presents to the eye that color. (some colors are absorbed and some are repelled.) This is true with all colors between white and black.

white is the preasence of a full emission spectrum (aka all color) and black is the preasence of a full absorpiton spectrum (aka no color) gray is the presence of a full emmission and full absorption spectrum.
