What about when you're on the phone do you find yourself still using your hands?

Everyone talks with his hands (except people with disabilities preventing them to do so). And not only hands. Human communication is a mix of verbal (spoken) and non-verbal (unspoken) communication.

The non-verbal communication makes up most of the communication, perhaps because it is also much older than spoken languages. Being so important, and so much older than exclusively written or spoken forms of communicating, non-verbal communication usually accompanies even such forms such as phone, internet chats (and emoticons are but a crude way of mimicking non-verbal communication in a more controlled manner).

BTW, non-verbal communication is automatic and subconscious, so it is usually that people "find themselves" (or, in many cases, don't even notice it) communicating non-verbally, then really trying to do so.

The answer, therefore is a simple yes. ;-)

All the time. I am really expressive with my hands and body when I talk. Sometimes it gets out of hand.

Yes, I always have that is why I learned sign language so quickly. It gave my hand use some direction!
