the equation is amino acid + amino acid then it has the symbol of an arrow cut in half and has one half of the arrow head at one end and the other half on the other end....then it is dipeptide + water

why are the arrows shown pointing in opposite directions?

That kind of arrow indicates equilibrium, meaning that you'll have a balance (not necessarily equal quantities) of reagents and products. In this case, the reaction tells you that if two amino acids come together in the presence of this enzyme, they can bond together with the loss of water. It also says that if a peptide comes together with water and the enzyme, that bond can be broken.

most of te enzymatic reactions are irreversible and the arrows on both sides indicate a reversible reation!!
