i'm getting my undergraduate degrees next year in two completely unrelated fields (psychology and economics). i'd like to do something along the lines of music editing. would i have to start all over again and get a different undergraduate degree? or is it likely for me to get into a master's program (i know, a lot are very difficult to get into)?

With luck, the simple ability to read sheet music, and understand how music sounds...

Now, if you're talking about the guy/gal that records the different tracks (vocals & instrumentals), (s)he is called, I believe, a Sound Engineer.

Talk to the admissions office of your local Technical / Community Colleges.
