I just set up a linux box and i'd like to enjoy it, what's there to do?

Set up a web server. Set up an FTP server. Set up a streaming media server. Configure your firewall. Change your desktop theme. Install applications for free. Etc.

Linux really doesn't do anything different from other OSs, you just have more flexibility with what you can do than, say MacOS or Windows.

Linux Mint Gnome = Ubuntu Linux Mint KDE = Kubuntu Linux Mint LXDE = Lubuntu Linux Mint Xfce = Xubuntu Linux Mint Fluxbox use Fluxbox because of the fact the DE. Linux Mint Debian is predicated off of Debian because of the fact the source and not Ubuntu and makes use of the Gnome DE. all of it comes all the way down to options, i in my view like Gnome, I even have tried all others yet finally end up going back to Gnome which seems to be extra of a organization orientated DE. LXDE, Xfce, Fluxbox, and Debian are all mild-weight DEs.

there is an application call WINE which will allow you to install your favorite windows games and applications!....That could be fun.......using linux but not tossing your old software!

Basically, everything you enjoy doing on Windoze, except for some "Windows only" Games.
