I need to space the posts @ 10' and plan to use 2x8 joists @ 16", 3/4" T&G plywood decking & double 2x8 headers.
Do I have to use a beam or can I use joist hangers and span the entire 10' distance? Will 2x8 be adequate or are 2x10 necessary?

I would use 2x10 a rule of thumb I always use is 10' = 10'' or 12' = 12'' good luck with your project

I wonder of the outer structure of the barn. Is it stable enough as is, or might you consider bolting ledgers to install your hangers?

I built a 12 x 20 loft awhile back that likely doesn't take the same weight as what your loft might eventually,. and used 2 x 10's (In fact used doubled 2x10's to support not only the flooring, but any weight that now sits on the floor.

The space/height loss is minimal, as little as a 2 inch difference perhaps in 2x8 ---2x10.
