You need a springform pan - the kind where the sides open up and come off the bottom. If you don't have one, you can make a cheesecake pie if you have pie pan or a round cake pan.
Also -
1 cup of graham cracker crumbs or shortbread cookie crumbs - they make these both in boxes precrumbled in the baking aisle.
Butter - 3 tbsp - melted ( this is easy in microwave for about 10 sec )
mix above and 1 tbl sugar, press in the bottom of the pan, or the bottom and sides of the pie or cake pan.
Filling - for a plain cheesecake in an 8 inch springform pan
For a pie pan use about 1/2 this much stuff
ingredients:
3 pkgs philly cream cheese ( I dont like the store brand )
3 eggs
1 cup sugar
1 tsp vanilla extract ( other flavors go great, too, I love rum extract )
To mix:
cut up the cream cheese in about 4 pieces each and put in the bowl. Use your mixer on low to cream it. Add one egg at a time until it is totally mixed in. After the eggs are all in, add the vanilla and sugar and mix until all smooth.
Pour into the pan.
put the pan on a cookie sheet in the oven, with a pan of water on the rack below, at 320 and bake for 50 min then turn off the oven and leave it for 30 minutes. a knife in the center should come out mostly clean, it may be a bit wet.
Refrigerate and serve when cold.

Get some cheese, I reccommend chedder. And then get a cake mix of your choice, I recommend vanilla, chocolate doesn't go well with cheese. Grate the cheese, mix the cake, put the cheese in the cake. Bake. And you have cheese cake!

I'm makeing one out of a box today, but I'm dreaming about the one a New York friend made for my family years ago--she actually used RICOTTA cheese ! It was (hate to tell my age but) almost 30 years ago & I STILL remember how incredible it was!!!!!

go to the store and buy one, use your nails to scratch open the box, and tell ppl you made it from "scratch" haha :)
