Crop rotation was practiced in ancient times. Around 1600 adding legumes was discovered to increase productivity.It started in Flanders and spread to England. I don't know any names associated with the discovery, but I hope this helps.

Note: Mendel lived in the 19th century

While I'm not aware of any one monk who is considered the father of the three field system, could you be thinking of Gregor Mendel, who is looked at as the founder of genetics? He worked with pea plants and inheritance of traits.
