Usually, it doesn't go anywhere. In most computer operating systems, a
deleted file just has a character changed in its name (or some related
identifying tag), so that the computer knows not to bring it up when asked
to list its files. When the computer needs disk space later, say, if you
want to save a new file, it can write the new data over the old data that
has been marked "free." But it won't actually erase the old data until
then.
This is how programs such as Norton Utilities can recover deleted files.
The longer a file has been deleted, the less the chance of recovering it,
because chances are parts of it have been overwritten by newer files.
This is also part of the computer security scandal that has hit America's
National Laboratories recently. If a secret computer file is loaded onto
an unsecure computer and then deleted, much of the data will still be on
the disk, and it can be recovered by some programs.

They go into fragments and are not totally deleted. Defrag is obsolete so using XCleaner is recommended. I included a link if you're interested.

To a digital sewers which processes the wastes and then recyles them. That "New Document" you created is made from the waste you created when y ou deleted your "Old Document".

Recycle Bin, After recycle bin, its gone... You can't have it back... Just think that you put an ice cube in the hot desert, about 1 minute later, you can't even see where is the water goes...

Simply put, all references to the file(s) are removed. After that, the space that the file(s) occupied is free and can have new information written to it. Before that though, the information is still there and can be recovered.

its still there-its on your hard drive....if you notice when you get people whom do illegal activities the FBI will confiscate there PC and check the hard drive...hope you'r not one
