Baltimore won't be in too much trouble as Ozzie Newsome is one of the better GMs in the NFL when it comes to constantly building the team through the draft. KC lost T Willie Roaf last year and still made the playoffs. They lost G Will Shields this year. I think that they'll be OK despite the fact that I think that their GM is a moron.
Actually, the team that strikes me as being in trouble will be the Patriots when one Bill Belichick retires as well as LB Tedy Bruschi and S Rodney Harrison. I don't care how good Tom Brady actually is or how good people think he is, he doesn't play defense and he doesn't develop the game plans. Without those three, the Pats are stick-a-fork-in-'em done.

I think the Chiefs are going to be hurt the most by retirement in the next 2-3 years. Like you mentioned, their o-line is already being dismantled by retirement - Roaf last year, Shileds this year. Most of their line thats left, including back ups) has 8+ years in the league, Casey Weigmann (C) leads that group with 12. They also have an old secondary with Ty Law, Greg Wesley and Patrick Surtain - those guys don't have many years left. The other parts of their secondary just aren't very good. If they don't stop running LJ like they do he's gonna burn out in the next 2-3 years also, which will be about the time Gonzales will be done playing. At that point, without a couple great drafts and some excellent free agent pickups, the Chiefs will have just become the Detroit Lions.

New England Patriots offensive and defensive lines come to mind, Bruschi, Vrbael, Seau, Harrison. What makes this meaningful is these are the guys that have been the glue for the team since forever (except Seau).

One team you omitted is New England. They have a team full of 30 somethings. Vrabel, Bruschi, Harrison, etc.
Kansas City is going to be screwed, so they may consider drafting O-Line on the first day.

Mass retirements just won't happen. Why? Because people don't want to give up their little kingdoms and hand them over to someone else. People are very selfish about their careers and reputations, so will hang in as long as thy can and then convert to a similar consulting job. Best wishes

and i don't really know
i can think of a lot of teams with a lot of older guys
-the Dolphins come to mind (on D at least)
but whether some of these teams i'm thinking of will suffer...i don't know about
the Ravens usually do a really good job of replacing guys they lose with other talented young guys
so i don't know how much they'll actually suffer
