I am from Scotland and even I can't answer this.

Wikipedia (at the first link below) says that Scone, near Perth, was the "ancient capital of Scotland, until the later Middle Ages".

An Edinburgh Universty web page (second link below) says that "Edinburgh has been the capital of Scotland since 1437".

I don't think that leaves room for anywhere else before, or in between.

That is a tough one and I didn't find a good list, not at all. Sterling, Perth, St. Andrews and Edinburgh were all capitals, but the is just a beginning.
