You can rewrite this as:

5 - 3/8 = 40/8 - 3/8 = (40 - 3)/8 = 37/8 = 4 5/8

Another way to look at this is:

5 = 4 8/8

4 8/8 - 3/8 = 4 (8-3)/8 = 4 5/8
