If you want to be a psychiatrist, then you need to go to medical school. To get into medical school, you will need to take pre-med classes in college (Calculus, Biology, General and Organic Chemistry, Physiology, Biochemistry, Physics, English, and some others). To do well in these classes, you should take as many science classes as possible in high school, and the hardest ones you can take (AP or other college level, preferably).
If you want to be a psychologist instead (requires masters or doctorate in psychology, and will allow you to counsel but not prescribe medications) then you should get an undergraduate degree in psychology. In high school, take whatever AP classes appeal to you, but I think Biology, Psychology, and English would help you the most, as well as statistics if it is offered.

Psychiatry is very interesting. If you study pre-med subjects and then become a medical student, pass those exams and then become an intern, it is during that time that you definitely decide whether to be a Psychiatrist or go in for another specialty. So many interns change their specialty ideas during that time. But don't forget to become a docter and then a specialist takes 8 to 9 years before you earn a living wage. Psychology takes 4 years, but you aren't guaranteed a full paying job for the first few months/years.

First, decide if it is a psychiatrist, psychologist, or counselor that you want to be.
If it is, in fact, a psychiatrist, you'll need to look at pre-med type of classes. You have to have your medical doctorate before specializing to become a psychiatrist.

I believe if you take anything that has science related would be helpful. Microbiology, Anatomy & Physiology. Latin as a language because medical terminology is based on Latin. Definitely, any physchology courses will help.
