How about like this? Determine a selection of hotels that you wish to work in as a dream hotel where your career will peak. Narrow down that list and research about those top three hotels. Even to the point of becoming their customer to know their service and food standard. Just be a "sponge" in the interim of your research.

Then, write a prospect letter of employment to the hiring manager or the person who can secure you a job in your dream hotel. In your letter, hint them of your irresistible suggestion to improve their food presentation or increase customer traffic to the in-house cafe or restaurant.

From this points onward, follow the rules and protocol in getting a job and such.
