For converting thermal energy into gravitational potential energy you could heat the air in a hot air balloon and let the balloon lift a load into the air.

For converting the elastic potential energy of a coiled spring into thermal energy you could attach the coiled spring to a piston in a cylinder filled with air and release the spring to force the piston to compress the air in the cylinder which would heat the air.
