Wild animals are wild .... no matter what a person thinks. SOME can be conditioned to accept people but the instincts (under most conditions) are still wild.
Alligators and Crocodiles have been around (in one form or another) for 225 MILLION YEARS. They were here when T Rex was the MAIN predator (and have survived). Humans have been around for about 2 million years and the ONLY reason we are not PREY is our ability to think rationally and use tools.
The Veteranarian made a mistake and it cost him his hand, even if it was retrieved and re-attached.. it will never be the same as if he had never lost it..
Steve Irwin also made a mistake and it cost him his life..
Wild animals play by their own rules... NEVER FORGET THAT !

I already saw this article a while back. With zoo restraint, it's generally hard to find out when certain reptiles are actually sedated.

As for why:

There is no why. Crocodiles are not domesticated animals, they follow their instincts and act on it. Working with exotics and wildlife isn't always the safest job in the world, and injuries are quite common on the job.

It's one of the risks you learn about. Regardless of how well trained any animal is, the animal will always have its basic instinct.

Because he's a crocodile, and that's what crocodiles do, they bite things. They're very good at biting things, it's kept them around for millions of years.

I imagine because that is what croc's do. They are carnivores. I don't think the croc meant anything personal by it.......that sucks for the vet though.
