some doors you can just stick the clip through a hole on the knob, but general locks that require keys wouldn't work with a clip unless you could shape the clip like the key.

It depends on the lock. Interior doors can be opened by sliding anything that is strong enough down behind the latch and maneuvering to slide the latch back. This normally will not work with exterior locks because the latch normally is a dead latch: it has a small bar that is held back by the shape of the hole for the latch - when it is retracted, the latch can't be pushed in. [You can see this by holding the bar in with the door open and trying to push the latch.]
Keyed locks can, in theory, be opened with a pair of paper clips, one of which is used to torque the cylinder (with a bent end) while the other is used to push or rake the pins to their dividing line.
