That really depends on your skillset and interests. If you like to sew there a number of niche products that are in demand. Specifically, custom car seat covers are a great sideline and can retail for up to 80$ on Ebay. Custom purses (if you have skill and creativity) are also a decent sideline. If you are good at carpentry, I would recommend small furniture pieces like shelving and tables and sell them for under regular retail (people love bargains). Offhand, I would say floristry is not a good business as the market is saturated with professionals struggling to get by. Same goes for soap making and custom cosmetics. If you are technically minded you could do appliance repair as it is a dying art and fewer and fewer people are doing it. Anyway, examine your knowledge and experience and then do research into the market and whether people are making money at it. You can find a hobby that is profitable but it is not a black and white decision. Best of luck!

Almost anything hand-made. I make money on jewelry and custom artwork, in my endless amount of "free time". Seriously, I know people who make good money doing artwork, cabinetry, tile work, mural painting, leather work, glass painting, custom fireplaces, etc. It depends on what you are interested in. If you can work on things that would be considered collector's items for homes, public, or individuals, you will find a niche. I used to groom dogs at people's homes. I even once read of a woman who sold hand-painted buttons and was able to put herself through college.

It works the opposite way: What are you already doing that nobody does as well as you, and that people would pay you for?

Well, you can learn to knit and people would probably pay a lot for hand knit stuff.
