Depends on what type of mexican music she likes, there's rock en español, pop, ranchera, banda, cumbias, etc.
Well, these are a few names, they're all from different types of mexican music, paulina rubio, thalia, mana, vicente fernandez, los tigres del norte, banda el recodo, juan gabriel, la sonora santanera, sonora dinamita, intocable, los tiranos del norte, huracanes del norte, los horoscopos de durango, diana reyes, K-paz de la sierra, rieleros del norte, let me think of a few more, and I'll get back to you. : )
la quinta estacion, jaguares, RBD, alejandra guzman, ramon ayala, but like I said, it depends on the type of Mexican music the lady likes, depends on what part of Mexico she's from, like my mom is from northern Mexico, and she likes norteño music, corridos and cumbias, younger people there listen to a lot of rock en español, so you should ask her exactly what type of Mexican music she likes, cause the last party my family had, everyone was complaining because of the music, the DJ was playing a lot of 'duranguense' music, and we don't like that. : )

I like the idea of picking two colors (like already mentioned) and tying everything in to that. Just makes it seem like a lot of thought was put into it. You can also ask guests to dress in those colors which will look great! I like the black and white idea the best. Here are some ideas if you go that route. Have fun!
