Please note 'friend' is plural in 2nd sentence. So which one is exactly correct?

I suppose, its 2nd. What do you say?

It's the second, and not only is it grammatically correct, it makes the most sense.

Why would you say "one of my friend?" If the noun is singlular, there is no need to say "one of my..." because the listener already knows who you are talking about!

Well, it's one of a group, right? If it's one of a group, then the group has more than one person. There are several "friends" you are speaking of, so it's plural...number 2, right?

The second one because you are speaking about one of a plural item. If it was friend's it would be possessive, and the first one would be simply, "My friend..."

Yes number 2 is the correct plural.
Number one is redundant - you need only say 'My friend.'
