You can install the Unix operating system (more commonly Linux) on any laptop provided you can get the correct hardware drivers for the laptop you choose.
Most laptops come with MS Windows installed (because MS forces them to sell all their products that way or loose their oem discount), so if you are willing to buy a computer Window installed you could choose your own Unix OS.
So this would really be a question for the operating system supplier that you choose. If you are going to buy your OS from a supplier like RedHat, they will tell you which hardware they will support - which these days is almost everything.
