you don't need to feel bad for your cat. it's perfectly natural - cats are predators in it's in their nature to hunt for prey. although you like animals, mice as well, don't try to change natural processes. trying to save a mouse, you did a bad thing to your cat (did you consider that), because it took time from her to catch that mouse. it's also a natural way to learn how to hunt and it's important for your cat.
after all, I understand that your intentions were good. if mouse doesn't want to eat or drink, it's probably very bad injured. you should go to the vet and that's all you can do for it.

A cat's mouth has very septic germs, so a small animal that has been bitten by a cat is most likely to die. Even people bitten by cats most often have to go to the doctor due to infection.
If the mouse isn't moving, eating or drinking, it is in bad shape. I'm afraid there's not much you can do. If the wound were less serious, you could get some rodent antibiotic at the pet store to feed it.

Mice dont really like cheese, try giving it some bird seed, peanuts, any kind of grains, seeds, nuts. Also use a tiny bottle cap for the water dish they use it more than a bigger dish. I have rescued my share of little mice in my time and thier powers of recuperation are surprising.. give him some time but dont handle it with your bare hands, use leather gloves, take a dropper or syringe(no needle) and offer it water from there by passing a droplet in front of their nose.. if the mouse does not drink it will surely die, they get dehydrated easily... make sure to offer seeds or crackers with peanut butter, they like seeds better though. I once found a near dead mouse in the laundry tub, I took him out and gave him food and water and he got better very fast, I also saved a momma mouse and her babies and her I could get to drink droplets of water off my finger... so cute!! Your mouse may not make it so be prepared but it might survive just make sure you have it in a secure area because they are escape artists. If it seems to be recovering, take an icecream pail fill it half full with seeds and go hide it in the grasses in a field etc and take off the lid, it will provide shelter and food for the mouse to give it a head start after that its up to mother nature.
