Buy eternity rings at the local jeweler. This way you still have your ring, but not an engagement / wedding ring. Plus eternity rings are gorgeous. Also, you can do a ceremony, but have a friend or trusted colleague do it for you rather than a preacher / priest.

Instead of engagement rings give each other commitment rings. They say I love you and don't want anyone else but are a step behind getting hitched. Celebrate the occasion with a romantic meal and if you have some spare cash, a nice stay in a hotel for the evening would be lovely. I love happy couples and I wish you many more happy years together.

You can get a blessing done at the registrers office it's like a marrige ceremony but it's just a blessing for your relationship
