If you mean a sandwich as oppose to a ploughmans lunch I would say
crusty white farmhouse loaf cut thickly
spread with good quality butter
good slice of mature cheddar
few slices of onion or small pickled onions to garnish
3 slices of tomato
2tsp of ploughman's pickle or branston pickle.
pepper and salt

(how do you make a good ploughman's sandwich?)
If he is really good
I would ask him what he likes in it when he has knocked on my door, and been invited into the kitchen.

Right - You need good White Bread. None of your supermarket basic stuff, but strong white bread made by your local baker. Inside place a thick slab of the reddest maturist piece of cheddar that you can buy. Get your pickles at the ready, your fresh salad and bite deeply. Enjoy.
(You've made me hungry now!)

Crusty bread, interesting salad, at least two types of pickle, chedder cheese (strong), blue cheese and a decent pint to wash it down. Oh and don't forget to sit in the sun whilst eating it.
