First you might want to make some substitutions to make the connections clearer
not idle = industrious
day boys = non-boarders

The key to a sorites is to connect the last premise back to the first

4 -> 1. If only those under 12 are idle and no boys are 12 are ... boarders,
then 'No idle boys are boarders.'
that is, 'Only industrious boys are boarders" or "ALL boarders are industrious boys."

Therefore 2. All the industrious boys=All the boys who are boarders have red hair.
Note that #2 implies " Any boy who does not have red hair is not industrious"
and that "Any boy who does not have red hair is not a boarder"
(Note that we do not know anything about the hair color of the non-boarders)

3. 'None of the non-boarders (=day-boys) learn Greek"
That is, those who are not boarders do not learn Greek.

Therefore, 'Any boy who does NOT have red hair does not learn Greek'
(You can also deduce "No boy under 12 learns Greek", but in that case the 2nd premise is of no use.)

Unfortunately, the last premise is a bit ambiguous, or else I'm misreading it. I get the feeling it is SUPPOSED to mean that ALL the boys under 12, and only the boys under 12, are idle --though it does not clearly say the first part. But in that case you could also deduce that NONE of the boys under 12 has red hair.
